The other white meat..

is pork! As Moe had mentioned before, chicken does get old. So, I have a WW recipe that was pretty tasty! It's called Smothered Pork Chops with Onion Gravy.
Ingredients: 4- 6oz bone-in pork loin chops, trimmed, 1/2 tsp salt, 1/4 tsp black pepper, 1 tsp olive oil, 2 sweet onions- thinly sliced, 1/4 cup water, 2 tsp all-purpose flour, 1 cup reduced- sodium beef broth, 1 tsp whole-grain dijon mustard, 1 Tsb chopped fresh thyme
1. Sprinkle the chops with the salt and pepper. Heat oil in a skillet over medium-high heat. Add chops and cook, turning occasionally until browned, about 5 minutes. Transfer to plate.
2. Add onions and water to the skillet; bring to a boil. Reduce heat and simmer, covered. Stir occasionally until onions are tender, 12-15 minutes.
3. Sprinkle the onions with flouir, cook, stirring constantly for 1 minute. Add broth, mustard, and thyme, bring to a boil until sauce thickens.
Return chops to skillet. Reduce heat and simmer until chops are heated through.

I served with broccoli. It was yummy! As you can probably tell, the plate looks small. It's actually a salad plate. I find this helps with portion control. The plate looks really full, so it's easy to "trick" your mind that you ate more than you did.
Anyway, I have good news to report from this week's weigh-in. I lost 2.8 lbs! So that brings my total to 4.2. Slow and steady wins the race, right? At this point, I am exercising everyday for a half hour, eating healthy and enjoying it! It has turned into a habit, which is nice. Anyway, until next time- happy dieting!
